Juniper Simple Syrup

Ingredients
  

  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons dried juniper berries crushed

Instructions
 

  • Using a mortar and pestle, crush the dried juniper berries until they're broken down and fragrant.
  • In a small saucepan over medium heat, combine the sugar and water. Bring to a simmer (tiny bubbles), stirring occasionally until the sugar has completely dissolved.
  • Remove from heat and stir in the crushed juniper berries.
  • Let the syrup cool in the saucepan at room temperature for 30-45 minutes. Start tasting at the 30-minute mark to check if it's reached your desired flavor intensity. Be careful not to let it steep too long, as the flavor can become bitter.
  • Pour the syrup through a fine mesh strainer into a glass jar, discarding the berries. For an extra-clear syrup, strain once more through a cheesecloth to remove any remaining particulates.
  • Store in an airtight glass jar in the refrigerator for up to one week, or in the freezer for several months.
