Ingredients
  

  • 2 oz Xin Xin Gin or any bright, citrus-forward gin
  • 0.5 oz persimmon purée
  • 0.75 oz honey syrup
  • 0.75 oz fresh lemon juice

Instructions
 

  • Add gin, persimmon purée, honey syrup, and lemon juice to a shaker with ice.
  • Shake hard for 12–15 seconds until the drink is cold and smooth.
  • Double-strain into a chilled coupe to remove any pulp (persimmons are high in pectin, so they need a good shake and strain).
  • Garnish with a persimmon slice or a lemon twist.

How to Make Persimmon Purée

You only need one ripe Fuyu persimmon to make a few cocktails.

  1. Peel and chop 1–2 ripe Fuyu persimmons.
  2. Blend until completely smooth.
  3. Add a splash of water if it’s too thick.
  4. Optional: strain for an ultra-silky texture.

Purée will keep in the fridge for 3–4 days or up to a month frozen.

Mocktail Version

    • 1 oz persimmon purée
    • 0.75 oz honey syrup
    • 0.75 oz lemon juice
    • 2 oz sparkling water or non-alcoholic gin
Shake everything except the bubbles, strain, then top with soda. Garnish the same way.
