Rosemary Simple Syrup

Equipment

  • 1 Fine mesh strainer
  • 1 Cheesecloth cut a square that is 3x-4x larger than your vessel
  • 2 Mason jar
  • 1 Saue pan

Ingredients
  

  • 1 cup water
  • 1 cup sugar
  • 3-5 sprigs Rosemary fresh

Instructions
 

  • Combine water and sugar in a saucepan over medium heat. Stir until the sugar dissolves.
  • Add the rosemary sprigs and bring the mixture just to a simmer.
  • Turn off the heat and let the rosemary steep for 15–30 minutes, depending on how strong you want the flavor.
  • Strain out the rosemary in a cheesecloth and let the syrup cool completely.
  • Store in a sealed glass container in the fridge for up to 2 weeks (up to one week is better and more likely though).

Notes

  • Start with 3 sprigs for a milder syrup, go up to 5 if you want bold herbal flavor.
  • For extra depth, lightly crush the rosemary with your hands before steeping.
  • The syrup will have a soft golden hue—this is normal!
